Slim Line Cabbage Rolls

Preparation Tips:1. In a heavy skillet, heat oil. Add onion, celery, and carrot. Cover.
2. Cook, stirring often, until softened.
3. Remove core in cabbage. Place cabbage in large pot of boiling water. Cover. Cook 15 minutes. Drain, cool. Pull off about 14 of largest leaves,.
4. Add the canned tomatoes and brown sugar to the vegetables in the skillet. Cover partially. Cook over low heat about 20 minutes. Cook rice by package directions.
5. In a bowl, mix the onion, salt, pepper, turkey and rice, blending well.
6. Fill each leaf (cutting out thick part of rib) with 2 rounded tablespoons meat mixture. Roll up, folding in sides.
7. Stir lemon juice into tomato mixture. Place cabbage rolls in tomato sauce. Cover.
8. Cook over low heat for 1 hour. Shake to keep from sticking.
9. Serve directly from skillet, spooning with extra sauce.
