2 pounds whole green beans
1 pound fresh mushrooms, stems removed and thinly sliced
4 tablespoons butter
4 tablespoons oil
Salt
Freshly ground pepper
Preparation
Instructions:
Wash beans and remove tips. Add them a handful at a time to a large pot of boiling, salted water, so that the water does not stop boiling. Cook uncovered 8 to 10 minutes, then immediately drain and plunge into cold water to stop the cooking. Return beans to empty pot and shake briefly over high heat to dry them. Set aside and keep warm.
Melt the butter in the oil and saute mushrooms until just wilted. Combine with beans, toss and season well. Serves 8.
