Caramel Apples with Applejack Foam

4 medium apples
2 tablespoons lemon juice
3/4 cup granulated sugar
6 tablespoons water
2 tablespoons butter
Applejack Foam:
4 egg yolks
1/4 cup + 2 tablespoons sugar
1/4 cup applejack or apple brandy
1/4 cup water
Toasted almonds, for garnish

Preparation Instructions:
1. Peel, core and cut apples into 1/4 inch slices. Place in large bowl. Toss with lemon juice.
2. Combine sugar and water in small saucepan. Stir over low heat to dissolve sugar.
3. Cook over high heat, without stirring, until light, golden brown.
4. Pour caramel into lightly buttered 8 inch baking dish.
5. Place apples over caramel. Dot with butter.
6. Bake at 400 degrees, stirring occasionally until apples are tender and caramel has dissolved, about 25 minutes. Remove from oven. Cool.
7. Prepare Applejack Foam: In the top of a double boiler, beat egg yolks and 1/4 cup sugar with a wire whisk, until thick and lemon colored.
8. Whisk in applejack. Set bowl over simmering water. Continue to whisk, incorporating as much air as possible. When the mixture is thick and will form a thick foam, remove from heat.
9. Whisk in 2 tablespoon more sugar.
10. Divide apples among dessert dishes. Top with applejack foam. Sprinkle with almonds. Serve.
