Lemon-Marinated Sirloin

1 1/2 pounds sirloin steak, 1 to 1 1/2 inches thick
Lemon-Mustard Marinade:
3 tablespoons lemon juice
1 1/2 grated lemon rind
4 tablespoons salad oil
1/4 teaspoon pepper
1/8 teaspoon cayenne pepper
1 tablespoon Dijon-style mustard
1 clove garlic, minced
Lemon slices or wedges, optional, for garnish
Sage leaves, optional, for garnish

Preparation Instructions:
1. Trim excess fat from steak. Place in a shallow glass dish.

2. Combine the marinade ingredients in a small bowl. Pour over steak.

3. Turn steak to coat both sides with marinade. Marinate at room temperature for 1 to 3 hours. Or refrigerate and marinate 6 hours or more.

4. Prepare barbecue grill.

5. Wipe off excess marinade from meat (back into dish).

6. Grill 5 inches from coals, about 8 to 10 minutes on first side. Baste with remaining marinade.

7. Turn. Grill 5 minutes more or until cooked to your preference. Continue basting.

8. Place on a cutting board. Carve into thin strips.

9. Garnish with lemon wedges and sage leaves, if desired.

Tips: The top sirloin is boneless and is the cut of meat you want.

Good served with: Fresh sliced tomatoes, rice, sauteed mushrooms and crusty French bread. For dessert, an orange sponge cake with sherbet and strawberries.
