Apple-Orange Pancake

4 eggs
1 cup milk
1/2 cup half and half
1 1/4 cups all-purpose flour
1 teaspoon baking powder
Dash salt
1 tablespoon granulated sugar
1 tablespoon grated orange rind
2 apples, peeled, cored, cut into thin slices
About 1 tablespoon orange juice
About 2 tablespoons grated orange rind
Powdered sugar, optional

Preparation Instructions:
1. Separate eggs. Keep whites in the refrigerator for a while.

2. In a large bowl, combine egg yolks, milk, half and half, flour, baking powder, salt, sugar, and orange rind. Whisk until well blended.

3. Beat egg whites until soft peaks form. Fold gently into pancake batter.

4. Pour mixture into a lightly greased baking pan.

5. Bake at 400 degrees for about 20 minutes.

6. When batter is starting to set, arrange apple slices in a thin layer over pancake. Sprinkle with orange juice and orange rind.

7. Continue to bake at 400 degrees for another 10 minutes until pancake is set and apples are soft.

8. Sprinkle with powdered sugar and grated orange rind, if desired. Cut into wedges to serve.

Note: This pancake is baked in the oven but you may use the same batter for making individual pancakes in a frying pan, if desired.
