4 large potatoes
Topping:
1 small onion, chopped
2 cloves garlic, finely chopped
1 green bell pepper, chopped
1 tablespoon butter or margarine
1 tablespoon tomato paste
1 teaspoon chopped parsley
1/2 pound coarse ground sausage mixture
Marjoram, to taste
Salt, to taste
Pepper, to taste
1/3 cup butter or margarine
Marjoram, for garnish, optional
Preparation
Instructions:
1. Wash the potatoes. Pat dry.
2. Bake at 400 degrees for 45 to 55 minutes.
3. In a frying pan, saute onions, garlic, and bell pepper in 1 tablespoon butter. Cook until tender. Add tomato paste and parsley.
4. In another frying pan, brown the sausage over high heat. Cook over medium heat for 10 minutes. Drain sausage well after cooking.
5. In a bowl, combine vegetable mixture with sausage, a little marjoram, salt and pepper to taste. Mix well. Set aside.
6. Cut open the potatoes. Remove inside of potato to a bowl. Keep potato skins whole.
7. Add the 1/3 cup butter. Mash well. Add salt and pepper to taste.
8. Add sausage mixture to mashed potatoes. Mix well.
9. Put generous amount of mixture in potato skin. Bake at 400 degrees for 10 minutes. Serve at once.

Tips: In this recipe you can substitute any meat for the sausage and add any vegetables that you like. Last night's leftovers will work miracles.
