1 3/4 pounds firm fish fillets such as orange roughy, sole or white fish
Dash salt
Dash freshly ground pepper
Topping:
2/3 cup mayonnaise, preferably light mayonnaise
1 egg yolk
3 tablespoons Dijon-style mustard
2 tablespoons grated Parmesan cheese
Chopped parsley or dill
Preparation
Instructions:
1. Rinse fish fillets. Pat dry. Cut into uniform pieces.
2. For topping, combine mayonnaise, egg yolk and mustard.
3. Place fish on a baking sheet, lined with foil for easy cleanup. Sprinkle fish with salt and pepper.
4. Spread fish with the topping. Sprinkle with Parmesan cheese.
5. Broil 4 to 5 inches from source of heat for 6 to 8 minutes until top is lightly brown and fish flakes when probed with a fork.
6. Sprinkle fish with chopped parsley or dill. Serve.
Good served with: Steamed broccoli, boiled new potatoes or steamed rice. Apple pie for dessert.
Tips: If using frozen fish fillets, thaw lightly first. Pat dry.
