Layered Banana Salad

2 packages (4 serving size) or 1 package (8 serving size) Jello brand lemon or lime flavor sugar free gelatin
1 1/2 cups boiling water
1 cup cold water
Ice cubes
1 cup sliced banana (about 1 medium)
1/2 cup sour cream or vanilla yogurt
1/4 cup diced celery
1/4 cup chopped walnuts

Preparation Instructions:
Completely dissolve gelatin in boiling water. Combine cold water and ice cubes to make 2 cups. Add to gelatin, stirring until slightly thickened. Remove any unmelted ice. Measure 1 cup of the gelatin; set aside. Fold banana into remaining gelatin and spoon into 5 cup serving bowl. Blend sour cream into measured gelatin. Fold in celery and nuts. Spoon carefully over banana mixture in bowl. Chill until firm, about 3 hours. Garnish with additional banana slices and mint, if desired. Makes 4 1/2 cups or 8 servings.
