Cajun Halibut

1 1/2 pounds halibut steaks
1 cup pecans, finely chopped
3 tablespoons flour
1/2 teaspoon salt
1/4 teaspoon pepper
2 tablespoons maple syrup
4 tablespoons salad oil

Preparation Instructions:
Pat halibut dry with paper towel. Mix together chopped pecans, flour, salt, and pepper on a flat plate. With a pastry brush, coat one side of each halibut steak with maple syrup; then dredge in pecan mixture. Repeat procedure to coat other side. Heat 2 tablespoons oil in a skillet. Fry halibut at high heat for 10 minutes per inch thickness, turning once halfway through cooking time and adding more oil to pan as necessary. Makes 4 servings.
