2 teaspoons vegetable oil
1 pound boneless, skinless B.C. chicken breast, sliced into strips
1 small onion, sliced
1 BC Hot House sweet red pepper, thinly sliced
1 BC Hot House sweet yellow pepper, thinly sliced
3/4 cup Asian Family Satay Peanut Sauce
Preparation
Instructions:
1. In a wok or a large non-stick frypan heat oil over medium heat.
2. Add B.C. chicken and stir-fry for 3 to 5 minutes or until no longer pink.
3. Add onion and BC Hot House peppers and stir-fry for 2 to 3 minutes. Then add Satay Peanut Sauce. Turn heat down to medium-low and continue cooking for 3 to 4 minutes or until vegetables are tender.
4. Serve with rice or pasta. Serves 4.
