Ham Quiche

Crust:
1 1/4 cups all purpose flour
Pinch salt
3 tablespoons butter
3 tablespoons shortening 3 - 4 tablespoons cold water
Filling:
1/2 pound cooked ham, cut into small cubes
1 cup grated Swiss cheese
2 tablespoons red wine (optional)
Custard:
4 eggs
3/4 cup milk
3/4 cup heavy cream
2 tablespoons melted butter
Pinch salt
Pinch cayenne pepper
Pinch nutmeg

Preparation Instructions:
Mix flour & salt together, cut in the butter & shortening, add 3 tblsp. of cold water, mix until it gathers in a ball, (add more water if needed) chill 1 hour, roll out to fit dish. Cover with a sheet of foil. Fill with uncooked rice or dry beans & bake in a pre-heated oven 400 deg. For 7 min. Remove foil & beans, prick crust with fork & continue baking for another 5 min. Let cool before adding the remaining ingredients.

Whisk together with wire whisk until blended, scatter the ham & cheese in bottom of pastry shell, stir red wine into custard mixture if using & pour into the pastry shell. Bake in preheated 375 deg. Oven for 40 min. Or until the custard is puffy & brown.
