1/2 pound sausage, sliced
1 1/2 cups hash browns
6 eggs, beaten
1/2 cup cheese, grated
1/4 cup frozen corn
1/4 cup chopped onions
1/2 red or green pepper, chopped
1/4 teaspoon chili powder
3/4 cup water
Salt
Pepper
Fresh chopped cilantro, optional
Salsa, optional
Preparation
Instructions:
1. Cook sausage 3 - 4 minutes until browned. Remove excess grease with a paper towel. Set aside.
2. Spread hash browns and onions evenly to cover the base of the Super Hot Air Cooker. Add 3/4 cups water, cover and cook on high heat for 6 minutes.
3. Remove cover, stir hash browns and season with salt, pepper, and chili powder.
4. Reduce to medium heat. Pour eggs over hash browns, add peppers, corn and sausage on top and cover with cheese.
5. Cover and cook for 6 minutes.
6. To serve, slide onto serving platter and cut into wedges.
