1 package Butterball Bacon Style Turkey (heated and chopped)
6 ounces uncooked angel hair pasta, broken
2 teaspoons olive oil
1 small onion, sliced
1 red bell pepper, cut into strips
16 ounces Egg Beaters egg substitute (or 8 large eggs)
5 ounces fat free ricotta cheese
4 ounces fat free mozzarella cheese, shredded
4 ounces reduced fat Swiss cheese, shredded
1/2 teaspoon salt
1/2 teaspoon black pepper
10 ounce package frozen spinach, thawed and squeezed dry
Preparation Instructions:
Chop and heat Butterball Bacon Style Turkey. Cook and drain pasta. Heat oil in large skillet over medium heat until hot. Cook and stir onion and bell pepper until tender. combine egg substitute, cheeses, salt, pepper and cooked pasta in large bowl. Add vegetables, spinach and Butterball Bacon Style Turkey. Spray 10 inch quiche dish with nonstick cooking spray; pour mixture into dish. Bake in preheated 350 degree oven for 30 minutes. Cut into wedges and serve with spicy salsa, if desired. Makes 8 servings.
