Island-Style Mahi Mahi

2 1/2 pounds mahi mahi or red snapper fillets
3 tablespoons lime juice
2 tablespoons vegetable oil
1 large onion, peeled and sliced
1 green pepper, sliced
1 cup seeded, diced tomatoes
1 tablespoon tomato paste
1 tablespoon Worcestershire sauce
1 teaspoon hot pepper sauce
Salt
Pepper

Preparation Instructions:

Place fish in a shallow dish. Sprinkle evenly with lime juice and 1/2 cup water. Turn over and let stand for 15 minutes.

Heat half the oil in a large non-stick skillet set over medium heat. Add onion and cook, stirring often, for 5 minutes. Increase heat to high and add green pepper. Stir fry for 3 minutes.

Stir in tomatoes, tomato paste, Worcestershire sauce and hot pepper sauce. Bring to a boil and cook, stirring often, for 3 to 5 minutes or until thickened. Transfer to a platter.

Remove fish from lime mixture and pat dry. Sprinkle evenly with salt and pepper. Add remaining oil to pan. Add fish and cook, turning once, for 6 to 8 minutes or until golden and flaky. Return vegetable mixture to pan and cook until reheated. Makes 6 to 8 servings.
