Pasta with Tomatoes & Cheddar

2 1/2 cups scoobi doo pasta (or other bite-size shapes)
1 tablespoon olive oil
2 cloves garlic, minced
1/2 teaspoon red pepper flakes
1 medium zucchini, coarsely chopped
1 - 1 1/2 teaspoons dried basil
1 - 1 1/2 teaspoons dried oregano leaves
5 medium Florida Sunfresh tomatoes, chopped
225 gram package Black Diamond medium or old cheddar cheese, cut into cubes
2 green onions, sliced

Preparation Instructions:

Cook pasta according to package directions. Drain.

Meanwhile, in large shallow skillet over medium-high heat, heat oil, garlic and red pepper flakes for 30 seconds. Add zucchini and herbs, saute 2 minutes. Stir in tomatoes and heat through about 1 minute.

Add drained pasta, cheese and green onions to skillet and toss to coat. Serve immediately. Serves 4.
