3 to 3 1/2 pounds frying chicken pieces
1/4 cup flour
1/4 cup melted butter
2/3 cup undiluted Carnation Regular or 2% Evaporated Milk
10 ounce can cream of mushroom soup
1 cup shredded process cheese
2 cups cooked whole small onions
1 cup sliced fresh mushrooms
Paprika
Preparation Instructions:
Coat chicken with flour. Melt butter in a 13 x 9 x 2 inch baking dish. Arrange chicken pieces, skin side down in dish. Bake, uncovered in moderately hot oven (425 degrees) 30 minutes. Turn chicken, bake 15 to 20 minutes longer or until tender. Remove from oven, pour off excess fat. Reduce oven to 325 degrees. Add onions and mushrooms to chicken. Combine evaporated milk, soup and cheese. Pour over chicken. Sprinkle with paprika. Cover. Return to oven, continue baking 15 to 20 minutes. Makes 6 servings.
