Salsa Cruda

3 large cloves garlic
1 cup chopped cilantro leaves
1 bunch (8 to 10) scallions, white parts
1 sweet bell pepper (yellow, orange or red)
1 chopped jalapeno pepper, seeds removed
4 large ripe tomatoes, seeded and chopped
1 tablespoon fresh minced oregano leaves
1/2 teaspoon salt

Preparation Instructions:

Pulse all ingredients in a food processor until coarsely chopped, or at most reduced to a large-size mince. Salsa can also be prepared by hand, chopping the ingredients in a large bowl. The sauce should be lumpy, with all ingredients recognizable.
