2 to 3 pounds brisket or round of beef
Barbecue Sauce:
1/2 cup cider vinegar
1 clove garlic, minced or pressed
1 tablespoon vegetable oil
3 tablespoons Worcestershire sauce
Few drops Tabasco
2 tablespoons brown sugar
1 tablespoon mixed pickling spices
1/2 cup tomato ketchup
1 teaspoon whole grain mustard
1 teaspoon salt
Preparation Instructions:
1. Place beef into a non-aluminum pan , or on center of a charcoal grill with fire banked on either side, or on top shelf of smoker oven with water pan filled.
2. Combine remaining ingredients in saucepan. Simmer for 15 minutes.
3. Pour sauce over beef if baking in the oven. Brush beef with sauce if cooking over charcoal.
4. Cook, basting with sauce frequently until meat is tender, about 2 hours, at 350 degrees or over charcoal. (If using charcoal smoker oven, follow manufacturer's directions for timing).
5. Remove meat from heat. Allow to stand 30 minutes before slicing.
To serve as sandwiches: Slice meat thinly. Return to the sauce. Bake 30 minutes longer.
To serve as main dish: Slice meat thinly. Spoon sauce over servings.
Tips: Plan to cook this beef to serve for a meal, then thinly slice the remainder. Return to sauce. Cover. Refrigerate. Reheat for another meal and serve in split and buttered buns. Or, reheat and serve over a bed of steamed spinach for an attractive main dish.
