8 ounces white flour
Pinch salt
2 ounces butter
2 ounces caster sugar
1/4 ounce dried yeast
1/4 pint lukewarm milk
1 egg
4 tablespoons raspberry jam
Oil for deep frying
Preparation Instructions:
Sift the flour and salt into a large bowl and rub in the butter. Stir in 1 ounce caster sugar. Dissolve the dried yeast in the lukewarm milk and leave for 15 minutes or until frothy. Lightly beat the egg and add it to the bowl with the yeast liquid. Mix and then knead the dough for 5 minutes. Put it in an oiled polythene bag and leave it to double its size in a warm place. Lightly knead the dough and divide it into 12 pieces. Form each piece into a ball and place on a greased baking tray. Leave to prove for 15 minutes, then flour a finger and push it into the center of each ball. Fill the holes with a little of the jam and close them up. Leave to stand for another 5 to 10 minutes. Heat the oil to 360 degrees F and fry the doughnuts for about 3 minutes each batch. Drain on kitchen paper and dust with the remaining sugar. Makes 12.
To freeze: Open-freeze on a baking tray and bag when solid. Eat within 3 months.
