Pie Shell:
1 1/2 cups all-purpose flour
Dash salt
1/2 cup shortening
2 tablespoons butter or margarine
3 tablespoons ice water
Filling:
1 pint cleaned hulled strawberries
2 small apples, peeled, chopped
1/3 cup granulated sugar
1/3 cup brown sugar
3 tablespoons cornstarch
Preparation Instructions:
1. In a bowl, combine flour and salt.
2. Cut in shortening and butter until mixture resembles coarse crumbs. Add ice water. Quickly mix to form a dough.
3. For filling, hull and slice strawberries. Mix with chopped apples.
4. Blend together sugars and cornstarch. Mix with fruit for filling, toss gently.
5. On lightly floured surface roll out 2/3 of dough. Ease dough into a pie plate. Trim edges.
6. For top crust, roll out remaining dough. Cut small holes for steam to escape.
7. Pour pie filling into pie plate. Top with remaining crust.
8. Bake pie at 375 degrees for about 45 minutes or until crust is lightly brown and apples are soft.
9. If pie crust seems to brown quickly, cover top with foil to prevent overbrowning.
Tips: Mix pie dough quickly or it will become tough. Don't use too much extra flour when rolling dough out. A pastry blender is perfect for cutting in fat in flour mixture.
