Alpine Potato, Ham & Canadian Swiss Gratin

2 pounds (about 6 cups) baking potatoes, thinly sliced, divided
1 large onion, finely chopped, divided
6 ounces thinly sliced cooked ham
1 1/4 cups chicken broth
2 tablespoons all purpose flour
2 cups shredded Canadian Swiss cheese

Preparation Instructions:

Layer half the potato slices and half the onion in 2 quart shallow, rectangular baking dish. Sprinkle with salt and pepper. Arrange ham slices evenly over potatoes. Top with a second layer of potatoes and onions. Sprinkle with salt and pepper. Smoothly combine chicken broth and flour. Cook and stir over medium-high heat until mixture boils and thickens; pour over potatoes and ham in baking dish. Sprinkle cheese evenly over surface. Bake uncovered, in 375 degree oven 60 to 70 minutes or until potatoes are tender and cheese is browned. Let stand 5 minutes before cutting and serving. Makes 6 servings.
