Nugget Potato Frittata

8 eggs
1/2 cup milk
1/2 teaspoon dried basil
Salt, to taste
Pepper, to taste
2 tablespoons vegetable oil
1 medium onion, chopped
1/3 cup chopped red pepper
1/3 cup chopped green pepper
1 clove garlic, minced
1/2 pound nugget potatoes, cooked and finely chopped
1 cup chopped Fletcher's Lean 'n' Tasty ham
1/2 cup shredded medium cheddar cheese

Preparation Instructions:

Beat together eggs, milk, basil, salt and pepper. Heat oil in a 10 inch skillet at medium heat. Add onion, chopped pepper, and garlic. Cook and stir until tender. Add potato and chopped ham; cook 2 minutes longer. Pour eggs over vegetables. Reduce heat to medium-low. Cook for about 10 minutes until set, lifting edges to let uncooked egg run underneath. Sprinkle cheese over top. Cover with a lid until cheese melts. Makes 4 servings.
