300 gram package Olivieri Five Cheese Medallions
1 tablespoon olive oil
2 cloves garlic, minced
2 boneless, skinless chicken breasts, cut into strips
170 gram package Olivieri Sundried Tomato Pesto Sauce
2 tablespoons lemon juice
1 1/2 teaspoons salt
1/2 cup grated Parmesan cheese
1/4 cup chopped fresh basil
1/8 teaspoon black pepper
Preparation Instructions:
Cook pasta according to package directions. Meanwhile, in medium skillet, heat oil over medium-high heat. Saute garlic 30 seconds. Add chicken and saute 3 - 4 minutes or until no longer pink inside.
In large serving bowl, combine sundried tomato pesto, lemon juice, cheese, basil and pepper.
Drain pasta; add to bowl, and toss with sauce. Top with chicken. Serves 4.
