6 egg whites, lightly beaten
1 cup granulated sugar
3 ounces semisweet chocolate, melted
3 1/2 cups flaked coconut
1 1/2 cups chopped walnuts
1 teaspoon vanilla
1/4 teaspoon salt
Preparation Instructions:
1. Combine the egg whites and sugar in top of double boiler. See tip.
2. Cook over simmering water until mixture reaches 120 degrees or feels hot to the touch. Stir while heating.
3. Stir in melted chocolate.
4. Remove from heat. Stir in coconut, walnuts, vanilla and salt.
5. Drop by tablespoons onto a parchment lined or lightly greased cookie sheet.
6. Bake at 350 degrees for 20 minutes.
7. Loosen with spatula while still warm. Cool on a rack.
Tips: A mixing bowl can be placed in a saucepan of simmering water if no double boiler is available. If cookies stick, return to oven briefly and they will be easier to remove.
