8 cups shredded cabbage, about 1 small or half a large green cabbage
1 carrot, shredded
1/2 red pepper, thinly sliced
1/2 cup chopped flat leaf parsley or dill
Dressing:
1/3 cup cider vinegar
1/4 cup granulated sugar
2 tablespoons vegetable oil
1 1/2 teaspoons salt
1/2 teaspoon dry mustard
1/4 teaspoon pepper
Preparation Instructions:
Toss together cabbage, carrots, onion, red pepper and parsley in a large bowl. Combine dressing ingredients in a microwaveable bowl or glass measure. Microwave at high for 1 minute. Stir to dissolve sugar. Pour over vegetables and toss well. Cover and refrigerate several hours or overnight. Makes 6 to 8 servings.
