Tuck Away Beef Loaf

1 egg
1/4 cup chopped onion
1 1/2 pounds ground beef
1 cup dry bread crumbs
1 1/4 cups milk
1 1/4 teaspoons salt
1/4 teaspoon pepper
1 tablespoon Worcestershire sauce
1 tablespoon ketchup
1 tablespoon horseradish
3 peeled hard-cooked eggs

Preparation Instructions:

Heat oven to 350 degrees. Beat egg slightly with fork in large bowl. Add onion to the egg and mix well.

Spread half the meat mixture in ungreased loaf pan, 9 x 5 x 3 inches. Put hard-cooked eggs on meat mixture. Cover with remaining meat mixture. Pat top of loaf to make smooth. Bake uncovered 1 1/2 hours. 6 servings.

Tuck Away Baby Beefies: Shape meat mixture into 8 small loaves, each about 3 x 2 x 1 inch. Pus large pimiento-stuffed olives into centers of loaves. Place loaves in ungreased baking pan, 13 x 9 x 2 inches. Bake uncovered 45 minutes. 6 to 8 servings.
