1/3 cup frozen apple juice concentrate
1/4 cup minced chipotle peppers with adobe sauce
5 garlic cloves, minced
1/3 cup fresh lime juice
Grated peel of 3 limes
2 tablespoons olive oil
1 1/2 tablespoons honey mustard
1 1/2 tablespoons packed brown sugar
3 tablespoons Balsamic vinegar
1/4 - 1/2 teaspoon ground cumin
Salt and black pepper, to taste
6 tuna steaks (about 6 ounces each)
Preparation Instructions:
Combine all ingredients except the tuna in a plastic bag or non-metallic dish. Mix well. Add tuna steaks and turn several times to fully coat all sides. Cover dish or seal bag and refrigerate overnight, turning steaks several times during marinating. Remove steaks from marinade and grill or broil about 2 - 3 minutes per side or until seared on the outside but still rare on the inside. Discard unused marinade.
