6 boneless skinless chicken breasts (about 6 ounces each)
1/4 cup lemon juice
2 tablespoons liquid honey
1 tablespoon grated lemon rind
4 cloves garlic, minced
2 tablespoons olive oil
1/2 teaspoon ground cumin
1/2 teaspoon cinnamon
1/2 teaspoon paprika
1/2 teaspoon salt
1/2 teaspoon pepper
Garnish: Strips of preserved lemon or fresh lemon zest; sprigs of fresh coriander
Preparation Instructions:
Pound chicken breasts to an even thickness of about 1/2 inch. Place in large shallow dish. For marinade, mix together remaining ingredients; pour over chicken; turn to coat both sides. Cover and refrigerate for at least 2 or up to 6 hours.
On oiled grill over medium heat, grill chicken for about 4 minutes on each side or until just cooked through (no pink colour in center); don't overcook. Served garnished with lemon and coriander.
