1 cup Equal Spoonful
3/4 cup all purpose flour
6 tablespoons unsweetened cocoa, sifted
1/2 cup mini semi-sweet chocolate chips
1 teaspoon baking powder
1/4 teaspoon salt
6 tablespoons butter or margarine, softened
1/2 cup unsweetened applesauce
2 eggs
1 teaspoon vanilla extract
Preparation Instructions:
Combine Equal Spoonful, flour, cocoa, chocolate chips, baking powder and salt.
Beat butter together with applesauce, eggs and vanilla. Stir in flour mixture; mix to combine.
Fill foil or paper cup lined miniature muffin cups with 1 rounded teaspoonful of dough.
Bake at 350 degrees for 10 to 12 minutes, or until wooden pick inserted in center comes out clean. Let stand 2 minutes before transferring to wire rack to cool. Makes 24.
Tip: If desired, sprinkle with chopped nuts before baking. When cooled, dust with additional Equal Spoonful.
