1/2 cup cucumber, peeled and diced
Salt
1 1/4 cups plain yogurt
1 to 2 tablespoons chopped fresh mint
1/2 teaspoon wine vinegar
Freshly ground black pepper
Preparation Instructions:
Put the cucumber into a sieve, sprinkle with salt, and leave for at least 30 minutes. This draws out some of the liquid so the dip is not watery. Spoon the yogurt into a bowl. Pat the cucumber dry with paper towels, and mix with the yogurt. Add the mint, vinegar, and black pepper to taste. Stir gently, and serve at once. Serves 2 to 4.
