1 pound boneless, skinless turkey breast
2 teaspoons vegetable oil
1 large onion, chopped
2 stalks celery, chopped
3 cloves garlic, minced
2 1/2 teaspoons chili powder
1 teaspoon dried parsley
1 teaspoon dried oregano
1/4 teaspoon salt
1/4 teaspoon cayenne pepper
1/4 teaspoon fresh ground pepper
1 medium green pepper, chopped
3/4 cup turkey or chicken broth
19 ounce can white kidney beans
2/3 cup shredded mozarella cheese
1/3 cup low-fat sour cream
Preparation Instructions:
Cut turkey into small cubes. Heat oil in a large non-stick fry pan or saucepan over medium-high heat. Add turkey, onion, celery and garlic. Cook, mixing constantly until turkey is no longer pink inside and onion is softened. (4 to 5 minutes).
Add dry seasonings, mixing well. Add green pepper and broth and bring mixture to a boil. Reduce heat and simmer covered for 10 to 15 minutes. Add beans, mozzarella cheese and sour cream. Heat thoroughly stirring frequently. Do not boil. Serve immediately.
