1 1/2 pounds country style pork ribs, cut in pieces
1/4 cup maple syrup
3 tablespoons soy sauce
1 tablespoon Dijon style mustard
2 teaspoons dried rosemary
1 clove garlic, minced or pressed
1/4 teaspoon maple extract
4 medium sized potatoes, scrubbed and cut into lengthwise quarters
2 large apples, unpared, cored, and cut crosswise into halves or wedges
Preparation Instructions:
1. Select meaty back ribs of pork for the most even cooking and glazing. Pat dry with paper towels.
2. Combine the maple syrup, soy sauce, mustard, rosemary, garlic and maple extract.
3. Coat meat pieces on all sides in the sauce. Marinate 30 minutes.
4. If cooking in the oven, line a shallow pan with foil. Place rack on top. Arrange meat, potatoes and apples on rack. Brush with sauce.
5. Bake at 425 degrees for 35 minutes or until an instant thermometer inserted into a piece of pork registers 165 degrees. Brush twice with sauce while cooking.
6. If cooking on grill, place meat, potatoes and apple on grill with charcoal "banked" on sides of pit. Brush with sauce.
7. Grill, turning and basting often, until meat is glazed and cooked through and potatoes and apples are tender but not mushy, about 35 minutes.
