Fruit Fritters

2 cups all purpose flour
1/2 teaspoon salt
1 tablespoon baking powder
2 tablespoons granulated sugar
1 egg, beaten
1 cup milk
1 1/2 tablespoons melted butter or margarine
Fresh fruit
Oil for frying

Preparation Instructions:

1. Sift dry ingredients together in a bowl.

2. Add egg, milk and butter, stirring well to eliminate lumps.

3. Prepare fruit. Cut apples into rings, pineapple into triangles, bananas into slices, etc.

4. Dip the fruit into batter.

5. Heat about 3 inches oil in heavy skillet. When bubbly, drop fritters into skillet. Turn when golden on one side.

6. Remove with slotted spoon. Drain on paper towels.

7. Sprinkle with powdered sugar or serve with maple syrup, if desired.
