New England Apple Cake

2 eggs
2 cups granulated sugar
1 cup vegetable oil
1 teaspoon vanilla extract
2 cups all purpose flour
2 teaspoons cinnamon
1/2 teaspoon salt
1 teaspoon baking soda
1 1/2 teaspoons water
1 cup chopped walnuts
4 cups (about 4 medium) apples, peeled, cored and coarsely chopped
2 tablespoons powdered sugar

Preparation Instructions:

1. In a large bowl, beat together the eggs, sugar, oil and vanilla until smooth.

2. Blend together flour, cinnamon and salt.

3. Add flour mixture to egg mixture, blending well.

4. Dissolve baking soda in water. Add to batter. Combine well.

5. Add nuts and apples. Combine well. Batter will be thick.

6. Spoon batter into greased 9 x 13 inch baking pan.

7. Bake at 350 degrees for about 55 minutes or until toothpick inserted in center comes out clean. Cool in pan.

8. Dust with powdered sugar when completely cool. Garnish with apple wedges.

Tips: This cake can be stored up to 2 days at room temperature and up to 2 weeks in the refrigerator.
