4 whole chicken breasts
1 medium onion
1 small stalk celery
2 stalks celery, sliced
1 small carrot
Salt to taste
Black pepper to taste
Two 9 - 10 ounce packages frozen broccoli
10 1/2 ounce can cream of chicken soup
2/3 cup mayonnaise
1/3 cup evaporated milk
1/2 cup grated cheddar cheese
1 teaspoon lemon juice
1/2 teaspoon curry powder
1 cup bread crumbs
Preparation Instructions:
Skin chicken breasts. Poach in water or chicken broth, adding onion, celery, carrot, salt and pepper to liquid. Cook, bone and cut meat into pieces. Cook broccoli according to package directions.
In greased 9 x 13 inch oven proof flat casserole lay out cooked broccoli. Top with chicken meat. Combine soup with mayonnaise, milk, cheese, lemon juice, and curry powder. Pour mixture over chicken and broccoli. Top with crumbs, cover and bake for 1 hour in preheated 350 degree oven. Makes 6 servings.
