1 cup long grain brown rice
2 cups cubed cooked turkey
1 cup cooked peas
2/3 cup sliced green onions, whites and part of green
1/2 cup sliced toasted almonds
Gingered Dressing:
1/3 cup salad oil
3 tablespoons wine vinegar
1 teaspoon black pepper
1/2 teaspoon salt
2 teaspoons grated fresh ginger
Preparation Instructions:
1. Cook the rice according to the package directions.
2. When rice is cooked and still hot, combine with turkey, peas green onions and almonds. Place in a large bowl.
3. Combine the dressing ingredients.
4. Pour dressing over the warm salad. Toss gently. Serve while warm or at room temperature.
