2 tablespoons cooking oil
1 clove garlic, finely chopped
1 small onion, finely chopped
15 ounce can chili (mild, hot, or jalapeno)
14 ounce can stewed tomatoe

1/3 cup salsa
6 large eggs
Grated cheddar or Monterey Jack cheese

Preparation Instructions:
Heat oil in skillet at medium heat. Add garlic and onion. Cook and stir until soft. Stir in chili, tomatoes and salsa. Bring to a boil, reduce heat and simmer 15 minutes. Crack eggs into chili mixture, increase heat to medium and cook covered, about 10 minutes until eggs are set. To serve, spoon into individual dishes. Sprinkle with grated cheese. Savour your creation with a side dish of tortilla chips and guacamole dip. Makes 3 to 4 servings.
