Olvera Street Chili Quiche

1 9 inch unbaked pie shell
Filling:
2 eggs
1 cup half and half or milk
1/2 teaspoon ground cumin
1/4 teaspoon salt
1/4 teaspoon red pepper flakes
4 ounce can diced green chilies, drained
1/2 cup shredded Monterey Jack cheese
1/2 cup shredded cheddar cheese
Fresh diced tomato, for garnish, optional

Preparation Instructions:

1. Brush the pastry shell with a little of the egg white from the 2 eggs. Let dry.

2. In a bowl, combine the eggs, half and half or milk, cumin, salt, pepper flakes, and green chilies.

3. Pour into the pastry shell, making sure that the green chilies are evenly distributed in the dish.

4. Sprinkle with the jack and cheddar cheeses.

5. Bake at 375 degrees for 25 to 30 minutes or until the quiche is set. Do not overcook.

6. Serve hot or warm, garnished with diced fresh tomato, if desired.
