Easy Peanut Butter Cookies

14 ounce can low fat sweetened condensed milk
3/4 cup reduced fat peanut butter
1/4 cup fat free egg substitute
1 teaspoon vanilla extract
2 1/2 cups reduced fat biscuit mix
1/4 cup granulated sugar

Preparation Instructions:

Using an electric mixer set at low speed, beat condensed milk, peanut butter, egg substitute, and vanilla until smooth. Add biscuit mix and stir until well blended. Cover and chill for at least 3 hours.

Preheat oven to 350 degrees.

Coat baking sheets with nonstick spray. Drop teaspoonfuls of dough 2 inches apart on baking sheets. Sprinkle cookies with sugar and bake until lightly browned, 6 to 8 minutes. Remove from baking sheets. Cool on wire racks. Store tightly covered. Makes 60 cookies.
