Honey Mustard Glazed Ribs

3 pounds pork spareribs
Seasoning:
2 teaspoons minced garlic
1/2 teaspoon dried thyme leaves
1 teaspoon rosemary
1/2 teaspoon dried sage leaves
1/2 teaspoon salt
1/4 teaspoon pepper
Mustard Honey Glaze:
1/4 cup grain mustard
1/4 cup brown sugar
1 tablespoon honey
2 tablespoons wine vinegar

Preparation Instructions:

1. Mince together garlic, thyme, rosemary and sage to release flavor of dry herbs. Add salt and pepper.

2. Spread mixture over spareribs on both sides. Place meaty side down on a baking sheet in single layer.

3. Bake at 350 degrees for 1 hour. Turn halfway through.

4. Combine glaze ingredients in saucepan. Simmer 1 minute.

5. Prepare fire, allowing coals to burn until covered with light grey ash. Spread coals in single layer.

6. Place ribs on medium hot fire, meaty side up. Spread top side of ribs with a third of glaze.

7. Cook for 5 minutes. Move ribs to outer edge of grill if there are flare ups. Use a mister to put out any fires.

8. Turn. Spread cooked top side of ribs with glaze. Cook about 5 more minutes.

9. Cut into serving pieces. Serve with any extra glaze.
