4 medium cooking apples
1/2 cup dark rum
2 tablespoons all purpose flour
1 teaspoon ground cinnamon
3 tablespoons butter
4 tablespoons brown sugar
2 tablespoons sliced toasted almonds, optional
Whipping cream, optional
Mint sprigs, for garnish, optional
Preparation Instructions:
1. Peel, core and slice apples.
2. Arrange in a shallow dish. Cover with rum. Let stand for at least 2 hours.
3. Drain apples. Reserve rum.
4. Dip apple slices in flour or lightly dust them with flour. Sprinkle with cinnamon.
5. In a skillet over medium flame, heat butter. Lightly saute apples on both sides about 15 minutes or until they are tender.
6. Sprinkle apples with brown sugar.
7. Pour half of the rum over apples.
8. Reheat the remaining rum.
9. When the apples and rum are hot, add the remaining warmed rum.
10. Ignite. Serve as soon as flame has died down. Sprinkle with toasted almonds, if desired.
11. Serve with a dollop of whipping cream or ice cream.
