Amaretti Baked Peaches with Mascarpone

8 large ripe peaches, peeled, halved and cored
1/2 cup butter, melted
1/4 cup almond flavoured liqueur
1 cup coarsely crushed amaretti cookies
1/2 cup packed brown sugar
1 cup mascarpone cheese or cream cheese
1/2 cup sliced almonds, toasted

Preparation Instructions:

Arrange peaches, cut side up, in large shallow greased baking dish. Stir butter with liqueur; pour over peaches. Mix cookies with sugar; spoon into cavities.

Bake in 375 degree oven for about 25 minutes or until tender. To serve, dollop with mascarpone; sprinkle with almonds. Makes 8 servings.
