6 slices bacon
2 beaten eggs
1 cup milk
1/2 cup cooking oil
2 cups packaged pancake mix
1 cup shredded cheddar cheese (4 ounces)
Maple flavored syrup
Preparation Instructions:
In a skillet cook bacon till crisp. Drain and crumble bacon.
In a bowl combine the beaten eggs, milk, and cooking oil. Place the pancake mix in a bowl. Add egg mixture; beat till smooth.
Fold in cheese and three quarters of the crumbled bacon. Bake on a hot, lightly greased waffle iron, using about 1/4 cup batter for each waffle.
Top each serving with maple flavored syrup and some to the remaining bacon. Makes 8 (4 inch) waffles.
