4 flour tortillas (9 inch)
1 cup shredded cheese
6 eggs
1 tablespoon milk
1/4 teaspoon salt
Pinch pepper
2 teaspoons butter
1/2 cup diced smoked ham
2 green onions, sliced
2 teaspoon minced jalapeno chili, optional
1/3 cup mild or medium salsa
Preparation Instructions:
Arrange tortillas on baking sheet; sprinkle with cheese. Place in 350 degree oven for 5 minutes or until cheese melts. Meanwhile, in bowl, beat together eggs, milk, salt, and pepper. In large nonstick skillet, melt butter over medium heat; add ham, onions and jalapeno; cook, stirring, for 1 minute or until onions are softened. Add egg mixture; cook, stirring often, for about 2 minutes or until eggs are just set. Spoon scrambled eggs along bottom third of tortillas; top with salsa. Fold in about 1 inch on sides of tortilla and roll up from bottom edge. Serve immediately. Makes 4 servings.
