5 tablespoons Dijon mustard, divided
3 tablespoons liquid honey, divided
1 cup soft bread crumbs (made from 1 to 2 slices of bread)
1/2 cup peeled, cored and finely chopped apple
1/4 cup minced onion
1/4 cup chopped parsley
4 rib pork chops, about 1 1/4" thick
Preparation Instructions:
In small bowl, combine 3 tablespoons mustard and 2 tablespoons honey; set aside for glaze.
In medium bowl, make stuffing by combining remaining 2 tablespoons mustard and 1 tablespoon honey, breadcrumbs, apple, onion, and parsley.
With a sharp knife, cut horizontal slits in pork chops to make a pocket for stuffing. Spoon stuffing into pockets, dividing evenly. Secure openings with toothpicks.
Place pork chops on greased grill. Grill over medium heat, turning often, until pork is no longer pink near bone. Baste with reserved glaze during last 5 minutes of grilling. Makes 4 servings.
