1 pound PC air chilled boneless skinless chicken breasts
2 cups frozen peaches and cream corn, thawed
650 ml bottle extra chunky mild salsa
2 cups PC Splendido Quattro Formaggi shredded cheese
Half 320 g bag tortilla chips
Preparation Instructions:
1. Preheat oven to 450 degrees.
2. Cut chicken into 1 inch cubes. In bowl, stir together chicken, corn and salsa. Spread over bottom of 13 x 9 inch glass baking dish. Top with half of cheese, then tortilla chips and remaining cheese.
3. Cover with foil. Bake in center of oven for 30 minutes. Remove foil and bake for a further 8 to 10 minutes or until golden. Serve with sour cream, if desired.
