Hawaiian Pork Stir Fry

1 pound lean boneless pork
1 tablespoon soy sauce
1 tablespoon minced garlic (1 teaspoon garlic powder)
1 tablespoon minced ginger (1 teaspoon ground ginger)
1 sweet red pepper, cut into strips
6 green onions, cut into 1 inch lengths
1 large carrot, peeled, sliced thinly on diagonal
2 tablespoons vegetable oil
570 ml jar Uncle Ben's Sweet & Sour with Extra Pineapple Sauce

Preparation Instructions:

1. Cut pork across the grain into thin strips. Add soy sauce, garlic and ginger and allow to marinate for 10 minutes.

2. In a large non stick wok, heat vegetable oil over medium high heat.

3. Stir fry pork for 3 to 5 minutes, or until meat changes colour.

4. Add vegetables and continue to stir fry for 2 minutes, or until vegetables are tender crisp.

5. Add entire contents of jar and stir fry until ingredients are coated and sauce has heated through.

6. Serve immediately over cooked rice.
