Greek Beef Salad

1 pound beef flank steak
1 tablespoon chopped fresh or 1 teaspoon dried oregano
1 teaspoon vegetable oil
1/2 teaspoon salt
1 clove garlic, crushed
3 green onions (with tops), sliced
1 green bell pepper, cut into 1/2 inch strips
3 tablespoons red wine vinegar
1 medium tomato, coarsely chopped
1/2 medium cucumber, seeded and chopped

Preparation Instructions:

1. Cut beef across grain into 2 x 1/8 inch slices. Mix beef, oregano, oil, salt and garlic in square dish, 8 x 8 x 2 inches. Cover tightly and microwave on high 6 to 7 minutes, stirring after 3 minutes, until beef is no longer pink.

2. Stir in onions and bell pepper. Cover tightly and microwave 2 to 3 minutes or until bell pepper is crisp tender; drain.

3. Stir in remaining ingredients. Cover and refrigerate at least 2 hours until chilled. Serve with pita bread and plain yogurt if desired. 4 servings (about 1 1/4 cups each); 180 calories per serving.
