Bruschetta

12 pieces crusty Italian bread, 1 inch thick
1/2 cup olive oil
2 large Roma tomatoes, peeled, seeded, and diced
2 tablespoons chopped fresh oregano
24 to 36 basil leaves, torn into small pieces
12 cloves garlic, peeled and cut in half lengthwise
Salt and freshly ground pepper

Preparation Instructions:

Toast bread on a grill or in a 425 degree oven, browning both sides. Remove and brush with oil. In a bowl, combine tomatoes, oregano, and basil. Liberally rub each slice of toasted bread with a clove of garlic. Top with the tomato mixture and sprinkle with salt and pepper. Place under broiler briefly and serve warm. Serves 12.
