Aylmer Pizza Soup

1 tablespoon vegetable oil
1 medium onion, chopped
1 cup sliced mushrooms
1/4 cup slivered green pepper
28 or 19 ounce can diced tomatoes
10 ounce can beef broth
1 teaspoon Italian seasoning
4 ounces pepperoni, thinly sliced
1 cup shredded mozzarella cheese

Preparation Instructions:

Heat oil in saucepan over medium heat. Cook and stir onion, mushrooms and green pepper for 5 minutes. Stir in tomatoes, beef broth and Italian seasoning. Bring to boil; stir in pepperoni. Simmer 5 minutes. Spoon into bowls and sprinkle with cheese. Makes 4 servings.
